Oh how I have enjoyed teaching these little kiddos about veggies and how to cook easy & tasty wholesome dishes. In each class we get to explore food through tasting, touching, smelling, listening and we learn about healthy eating facts when playing food games. The kids are always willing to participate and make the food even if they may not be ready to try it. However; nine times out of ten if somebody doesn’t want to try it but all of their friends are chowing down…eventually they want in on the tastyness too! Even 3 1/2 year olds have proven to like raw pizza, bok choy stir-fry, loaded veggie brown rice, zucchini pasta and now our potluck special: avocado and cucumber quinoa!
Yesterday’s class was a blast! It was our last class of the Peace School Program and we needed to make a dish for the potluck party that all of our parents were attending! We read a book by Annie Shelby to learn about what a “potluck” is and to practice the alphabet.
We then played a memory game to learn the names of all the ingredients that would go into our special potluck dish:
- C is for Cilantro and Cucumber
- A is for Avocado
- O is for Onion
- P is for Pumpkin Seeds
- L is for Lemon and Lime
- Q is for Quinoa
- F is for Flax Seeds
- S is for Spices
- H is for Honey
- S & P is for Salt and Pepper
Now it was time to work together to make the dish for the party~!
We couldn’t help but to snack along the way! Mmmmmmm….
We were very proud of our dish!!
Ingredients: Quinoa, avocado, cucumber, onions, milled flax seeds, orange juice & lime juice, cilantro, pumpkin seeds, cumin, chili powder, mexican oregano, honey, salt & pepper, and LOVE!
