Thunderstorms, wine and dinner…simple yet a real treat!

Mark and I got home last night and it was one of those evenings where you wouldn’t wish to be anywhere else in the whole wide world except home, in your cozy little space. Well, our home-space is little:)

Storms were rolling in, Neil Young’s Harvest moon was playing, wine was poured and green tea incense filled the air. A great night for catching up with the man and making a meal to match the ambiance.

Mark and I split the steps and the entire meal took about 20 minutes to make.  (click on link to view a quick clip)

Dinner in a few quick steps: 1) toast bread. 2) prep bok choy dish–chop carrots, garlic, turnips, radishes, bok choy, and sweet p’s. 3) fresh fruit and arugula. 4) sides: kimchi and thai curry hummus

Bok Choy recipe:

  • Finely chop sweet potatoes and garlic, thinly slice turnips, yellow onion, carrots and bok choy and slice 1 orange
  •  Caramelize onions: (place onions in pan, heat on med/high, let brown, stir and add dash water, repeat for 5 minutes.)
  • Add sweet p’s, carrots, turnips, garlic, water, salt, and 1 tsp sesame oil and cook for 4 minutes
  • Add juice from 1 orange
  • Remove from heat, plate, and garnish with sesame seeds, slice almonds and sriracha
