Healthy Pizza Pie

Homemade pizza is now my favorite pizza out there.

We do cheat a little; We go to our awesome neighborhood Pizza joint (East Side Pies) and buy their dough for 4 bucks–extra large. Mark is in charge of rolling the dough extra thin while I chop up the toppings. It is stupid easy and a whole lot of fun. The best part–biting into the crunchy, savory, spicy, homemade healthy pizza 30 minutes from the dough purchase!

*TIP* ….a pizza stone is worth every penny. We use it every time we have pizza and the dough is always perfectly cooked. Use lots of flour.

Ingredients: Pizza dough, mexican oregano, fennel seed, cayenne, honey, kalamata olives, jalapeños, lots of fresh rosemary, fresh onions, fresh mushrooms, garlic cloves, cracked pepper, and a touch of sea salt.

If you want to use cheese, use *Goat Brie* (goes so well with the honey, rosemary, cayenne, jalapeños and fresh onions!!)–you will use 1/2 of the cheese wheel and slice about 8-10 pieces into rectangles.

Step 1: Roll out the dough very thin…use lots of powder. Preheat over to 500

Step 2: Slice onions, mushrooms, olives, and jalapeños. Peel garlic and pull the rosemary leaves off of the stem.

Step 3: If you use Olive oil (pour 1 capfuls worth into your hand and smear it on the pizza dough and outer crust area. Otherwise, don’t worry at all about using oil:) Sprinkle copious amounts of Mexican oregano and fresh rosemary onto dough. Add cracked pepper, some fennel seeds, and any other spices you desire. Lay cheese on top of herbs–about 1 1/2 rectangles a slice.

Step 4: Make a pattern of your fresh ingredients by equally spreading them across the dough. The garlic, jalapeños, and olives can be the last items you add.

Step 5: More fresh rosemary and oregano. Add honey-squeeze bottle and move around in zigzags over the pizza. Add cayenne pepper. Add cracked pepper. Add a touch of sea salt.

Step 6: Blow her a kiss and send her in! 14~18 minutes.

Step 6: Throw together a raw salad: Greens, sliced tomatoes, shaved onions, cucumbers, carrots, and so forth. No dressing….maybe toss with a tiny bit of a vinegar and a few herbs–herbs de provence, italian herbs, more oregano, basil…whatever! Sprinkle a small amount of crushed nuts on top.

Step 7. Eat up!!! Top the pizza with fresh rosemary when it comes out:)
