Vegan Picnic at home!!!

Smoky and spicy sautéed mushrooms, sesame chard, bean and basil cracked wheat, and a walnut, red cabbage and avocado salad. YERM!!!!

Last night my husband and our roommate (for this month) had a vegan and scrumptious feast…these boys ate this food up like it was BBQ!!!

Garbanzo, basil, and cracked whet salad: (did you know that cracked wheat is low cal, high in fiber, iron, and protein…plus, all you have to do is pour boiling water over it and let it sit for 20 minutes.)

Tomato, basil, green onion, cracked wheat, garbanzo beans, cracked pepper, salt, 2 teaspoons of milled flax seed, lemon juice, korean red pepper, and a dash of white wine.

Smoky, spicy and sweet Mushrooms:

Mushrooms, garlic (lots), dash white wine and balsamic, fresh rosemary, chipotle powder, smoked paprika, dash of cinnamon, a lil honey, fresh jalapeños, and crushed red pepper.

Yummy, easy chard:

Rainbow chard, homemade jalapeño vinegar (white vinegar, rosemary twig, and fresh jalapeños…boil the vinegar with sugar before pouring into the jar) and sesame seeds.
Fresh salad:
Baby red and green romaine, a few crushed walnuts and almonds, shaved white onion, red cabbage, and avocado. Dressing: balsamic, sriracha, and whole grain mustard.
Served with toasted 7 grain bread.
