A Snacky Lunch

The leftover lentils and black beans had almost seen their last day in the fridge and I was a wee bit disinterested after eating them all week. Then it hit me–dip!

Using only what is in the fridge and turning some leftover lentils and black beans into a savory dip can make a yummy lunch snack plate. (10 minute lunch)

Bean dip: Lentils, black beans, kimchi, peanut butter, curry, and turmeric. Sounds crazy, tastes amazing.
Snack plate: Lettuce, bean dip, cucumbers, red onion, and toasted tortilla wedges=snack fest!
