Oh it feels so good. Pomegranate punch & breakfast tacos:)

I have been so busy the past month that I have neglected my urge to get creative in the kitchen. Clarification–I have neglected my urge to get creative in my own kitchen. I spend so much of my time cooking outside the house (which I adore) but I just cooked up a great little concoction at home and it felt fabulous. Some people have therapists (and I would gladly take one:) but for now, cooking is my therapy. Nothing like colorful & nourishing food love to tell yourself how much you appreciate you.

Pomegranate, lime and navel orange juice:

Cut 1 pomegranate in 1/2 and hold the half over a bowl with the exposed seeds facing down. Thump it with a wooden spoon or rolling pen until all the seeds fall out. Amazingly easy.

Place seeds and a whole Navel orange in a blinder and blend thoroughly. Strain the pulp and catch the juice. Add juice from 1/2 a lime and serve over ice. Ahhh. Also would be great with club soda..or vodka..or tequila.

Caramelize onions in pan on high heat. Then sauté with mushrooms, garlic, 1/2 tsp of tamari and sprinkle in a few caraway seeds. Add a little water if needed. Turn off heat and add spinach. Toss & Cover then set aside. Serve with avocados, sunflower seeds, toasted whole grain tortillas, pickled peppers, fresh onions and refried blk beans and chili powder.
